Thai Green Curry is made from a Green Curry Paste, which was originated from Asia. Today many restaurants and individuals make their curries using packaged Green Curry Paste for convenience, it has less preparation time and it’s usually cheaper to buy. We just heat up the coconut milk or cream then add the paste, salt, sugar and other ingredient like vegetables, chicken or seafood. There are many types of of curry paste at the supermarkets, but there is only one type of authentic curry paste, which is made from scratch using herbs and fresh ingredients, then grinding it with a mortar and pestle.
A basic curry paste has coriander seeds, coriander roots, cumin, peppercorns, lemongrass, lime, garlic, shallots and shrimp. The dry ingredients are usually heated up in a wok then grinned into powder using a mortar and pestle. Today many people use the food processor to process all the ingredients together until it becomes a thick paste. We don’t want to make this paste every time we cook curry, we might store some away in the fridge, so every time we need to cook curry, we just add the paste with coconut milk and other ingredients to cook our curries. The paste can be stored for about 3-4 weeks in the refrigerator and about 3-4 months in the freezer pork black curry.
When we go out to eat we expect the restaurants to make their own curry paste. The problem is that some cooks has a lack of skills, some restaurants can’t afford to hire good chefs, so even if the cooks make their paste, it doesn’t even taste as good as the package paste, so they might as well use the package paste. Some restaurant cut cost, cut staff no one has the time to make it, because it’s very time consuming to make a good curry paste.
People just want everything to be fast, no one wants to wait or spend the time, they think time is money. Just have a look at the supermarket shelves, look at all the can food, package food, frozen food, and processed food. Food is important if we want good health, we must learn to balance the type of food we eat, doing the best avoiding the foods with chemicals, coloring and preservative added.
